Food is linked to happiness. Call me crazy, but I would always tell my friends that I think the food served in UT cafeterias could be linked to depression. Think about it, everyday consist of stressing about classes, school work, organizations, internships, and more, and during all of that all you do is fill your body will mass produced food that 9 times out of 10 isn't good for you. You are what you eat. Point blank period.

This post is a simple collection of quick relatively healthy breakfasts options that I would eat during the school year to stay healthy and take care of my body.

Oatmeal

1. Fill the cup 1/3 of the way from the bottom with oatmeal.

2. Add enough water to slightly cover the oatmeal.

3. Microwave the oatmeal for about 1.5 mins.

4. Add toppings; I always take mine w/ brown sugar, almonds, and raisins

Strawberry Banana Smoothie

Ingredients:

8 medium sized strawberries sliced and frozen

1 1/2 medium sized bananas

1 Cup of Strawberry Greek Yogurt

1 Packet of Honest Kids Appley Ever After Fruit Juice

Directions:

Toss all of the ingredients into a blender. Press PULSE 4-5 times to chop up the frozen strawberries. Then blend on HIGH until everything in throughly blended.

Peanut Better Sandwich w/ Bananas

...this one is self explanatory.

This another grab and go that I can eat in the car or while walking to class. Banana's are a good source of potassium and the peanut butter is another source of protein.

Cereal Mix

My favorite cereal is a mix of

Oatmeal Crisp and Basic 4.

You might be reading this like...."Really, Amarachi? A cereal mix?" But I'm being so serious; these cereals by themselves are kinda bland, but when you mix them together it's sweet without being to sugary. T

Muffin with Eggs and Yogurt

Again a quick and easy breakfast that is kind of self explanatory. For mornings that I know I will want to sleep in before class, I simple boil eggs the night before, and when I wake up I pop a muffin in the microwave and grab some yogurt to while I walk to class.
